Fried Tofu Omelet with Sweet Soy Sauce

You guys have got to try this fried tofu omelet dish!

Going home to Jakarta means fulfilling my cravings - one of them being this classic home cooked dish that directly translates to tofu egg. “Tahu Telor” is essentially a tofu omelet, fried to crisp perfection, topped with a spicy sweet soy sauce. Though different households definitely have their own versions and recipes, we like ours topped with cabbage, beansprouts and this fried batter for an extra crunch!



The Recipe - Fried Tofu Omelet with Sweet Soy Sauce

The Fried Tofu Omelet

  • 3 eggs

  • 150 grams of tofu

  • 1/2 tsp chicken bouillon

  • Sprinkle of pepper

Toppings:

  • 1/2 cup blanched beansprouts

  • 2 layers of cabbage, chopped and blanched

Sauce:

  • 50 g Sweet Soy Sauce Bango

  • 3 cloves of garlic, minced

  • 3 pieces of thai chilli, minced

  • 15 grams of sugar

  • 2 g chicken bouillon

  • 2 tsp white vinegar

  • 300 ml water

Crunchy Fried Topping

  • 1 egg

  • 50 g rice flour

  • 25 g AP flour

  • 1 ¼ tsp coriander powder

  • ¾ tsp chicken bouillon

  • ¼ tsp white pepper

  • 200ml water

Steps:

  1. Let’s start with the sauce. Add sweet soy sauce and water into a small pot over medium heat.

  2. Add minced garlic, chili, chicken bouillon and sugar into the mix.

  3. Let it simmer for a minute or two. Add vinegar and adjust to taste. The sauce should be primarily sweet and sour, with a hint of spicy.

  4. Lower the heat and let it simmer until thickens, about 10 minutes.

  5. Next, let’s prep the batter for the crunchy fried topping. Mix rice flour, AP flour, coriander powder, chicken bouillon and white pepper in a medium bowl.

  6. In a separate bowl, whisk egg.

  7. Add egg and water into the dry ingredients to form a batter.

  8. Set aside, to work on the tofu egg omelet. Cut tofu into small cubes.

  9. Crack eggs and whisk.

  10. In a deep wok, heat up some frying oil.

  11. Add eggs into the bowl with the tofu.

  12. Once the oil is hot, pour tofu/egg batter in the oil, and fry until golden brown. Approximately 2-4 minutes each side.

  13. Next, fry the batter that you previously set aside. Fry until golden brown.

  14. Once you have all your components, put them together starting with the fried tofu and egg as the base. Next, top with some blanched beansprouts, add your crunchy fried batter crisps and cabbage. Finally, generously douse in your spicy sweet soy sauce.
