The Vietnamese Rice Paper Omelet that Got Me My Job

While I have experienced many important milestones in the past couple of months, one of the best things to come out of quarantine season for me is when I discovered the rice paper omelet trend on TikTok. This TikTok recipe is essentially a simplified version of the famous Vietnamese street food, Bánh Tráng Nướng, or “Vietnamese Pizza.” For those who are unfamiliar, rice paper originated in Vietnam and is made from rice, water, and salt. The skin is left to dry on a bamboo mat and leaves a unique cross pattern on each sheet.


My love for rice paper omelets peaked during a difficult period in life— I was on the job hunt. I spent my days looking for marketing jobs on LinkedIn and felt more and more distraught every day from the lack of response. I managed to land an interview with a startup a month later. I was extremely excited about the opportunity to be a part of the team but was also incredibly nervous for the interview.


While I can't remember the details of the interview, I was presented with a scenario I will never forget: “Let’s say you were running an omelet company. Pretend I am a customer. Try to sell me your omelet.” I was ecstatic. No amount of preparation could have helped me here, but the odds were in my favor. I recalled all of the times where I convinced my friends to try my rice paper omelet and pitched my make-believe rice paper omelet company.


The following week brought good news— I was offered a position in growth marketing! It has been an incredible experience so far, and I like to think that my passion for rice paper omelets helped me get to where I am today. With that, here’s the recipe so you can make your own rice paper omelet-- maybe it’ll help you out in unexpected ways!





THE RECIPE - Vietnamese Rice Paper Omelet


Ingredients:

1 sheet of rice paper

2 eggs

1 stalk of green onions (chopped)

1 cup of spinach

1 sausage link (cut into bite-size pieces

3 cherry tomatoes

Salt and pepper to taste

Sriracha





Steps:

  1. Whisk two eggs together in a bowl.

  2. Place the rice paper on a medium-sized pan over medium heat.

  3. Add whisked eggs on top of the rice paper.

  4. When eggs are slightly cooked, add your spinach, tomatoes and sausage.

  5. After 1 minute, add the green onions.

  6. Add salt and pepper to taste!

  7. Fold the rice paper like an omelet.

  8. Plate your omelet and drizzle with sriracha.
