Korean Cream Cheese Garlic Bread

I don’t know what it is about quarantine and the stay-at-home order, but my love for everything-Korean related things blossomed this past year. From binging on K-dramas to constantly ordering Korean food for take out (and heck, I’ve even started listening to Blackpink and watched their Netflix documentary twice), I decided to celebrate this new found love by recreating this delicious baked good - the Korean Cream Cheese Garlic Bread.


From what I’ve heard, this perfectly sweet and savory treat is a popular food you can find in the streets of Korea. The buttered rolls are cut midway into wedges and are smothered with the most delightful combination of cream cheese, garlic butter and herbs. Just writing about it is making my stomach grumble and mouth salivate, and I imagine you are doing the same. As an apology for now implanting this craving into your brains and stomach, here is the fun recipe I used to recreate this dish. Warning; this recipe might take your whole day haha! While I did bake my own bread rolls, it is perfectly fine to use some store-bought dinner rolls to speed up the process - they will taste just as delicious!


The Recipe - Cream cheese Garlic Bread Recipe


Ingredients:

Bread Buns

  • 110 ml warm milk

  • 30 g sugar

  • 4g instant yeast

  • 250 g bread flour

  • 3 g salt

  • 1 egg

  • 20 g unsalted butter, softened.

Cream cheese Filling:

  • 100g cream cheese

  • 15 g sugar

  • 30 g whipping cream

Garlic butter:

  • 100g Unsalted butter

  • 50g Garlic. minced

  • 1 Egg

  • 10g Parsley, minced

Steps:

Baking the Bread Bun

  1. Into a glass of warm milk, add in instant yeast and 30 grams of sugar. Allow to bloom for a few minutes.

  2. In a mixing bowl, add bread flour and salt. Mix well.

  3. Mix in egg into the wet ingredients.

  4. Add wet ingredients into the mixing bowl and incorporate well.

  5. Knead for about 5-10 minutes.

  6. Add in softened unsalted butter into the dough and knead to incorporate. Knead for approximately 15 minutes.

  7. Allow dough to rest in a well-oiled clean bowl for about 1 hour. Ensure that the bowl is in a warm setting.

  8. Once risen, knead for 2 minutes. Divide the dough into 6 sections. Mine were about 70 grams each.

  9. Shape the 6 dough sections into smooth balls and place on a line baking pan.

  10. Cover dough balls with a warm towel and let rise for another 30 minutes.

  11. Preheat the oven.

  12. Once the 30 minutes are up, bake at 180C/360F for 18-20 minutes.

  13. While the buns bake, make up the cream cheese filling and garlic butter.

Combining the Cream Cheese and Garlic Butter Filling

  1. Mix in ingredients for cream cheese filling in a bowl. Whisk to combine and place in a piping bag.

  2. For the garlic butter, melt unsalted butter and mix in with garlic, egg and parsley.

  3. Once the bread is baked, let cool before cutting.

  4. Slice bun in 8 sections, like pictured.

  5. Pipe cream cheese filling in between each section.

  6. Pour garlic butter on the buns.

  7. Bake again at 160C/350F for 10 minutes.

  8. Enjoy that oozy, glorious bun!
